Broccoli and Cheese Soup Goodness.

It’s officially Fall, and soup is always a good choice, right?  How about some broccoli cheese soup?! This isn’t your typical recipe, it isn’t a block of cheese and some broccoli heads, it’s much more tasty than that!  Check this out:

You’re going to need:
1 quart heavy cream
1 block cream cheese
2-3 broccoli crowns
1 onion
1 bag of mexican blend (medium size bag) cheese (shredded)
season salt

Chop your broccoli and and onions, stick them in a pot and boil for 20 minutes or until they are soft, then drain veggies (remove from pot).  Now take your heavy cream and poor it into previous empty pot that the veggies were cooked in.  Turn the heat to around medium, it should be almost bubbling – avoid high heat to avoid burning the heavy cream.  Once heated, put in cream cheese until it is melted down, then throw in your shredded cheese, seasonings and stir veggies back into the pot and you’re done!
